Weekly Rewind

It’s that time of the week when I share my favorites from around the blogosphere!

On Monday, Angela over at Oh She Glows posted this incredible looking Mocha Nutella. Boy do I wish I had a food processor after seeing this recipe. I know what I’m asking Santa for this year!

Cara from Fork and Beans is once again joining Brooke from Crackers on the Couch and making the 12 Days of Christmas cookies. Cara’s will be gluten, egg and dairy-free versions of Brooke’s cookies. Check out last year’s delicious cookies!

On Tuesday I was pressed for time to workout, so I did a quick workout at home. I love Fitness Blender’s Kettlebell HIIT Workout. 30 minutes of exercise burns between 8-14 calories per minute!

I’m on a quest to create a healthy and delicious homemade granola bar and happened to find this recipe on Gluten Free on a Shoestring! Who doesn’t love chocolate?

I picked up some SeaSnax at Wegmans this past weekend, and the logo is absolutely true! “Strangely Addictive”, I sure am glad I picked up a package in each flavor available!

Wednesday I read a few interesting articles. First up, this article on veganism and reduced rates of cancer. Next, I learned that Ellen DeGeneres eats eggs, but only “happy eggs” from her neighbor’s “happy chickens”.

Healthy Voyager posted a fantastic holiday gift list that’s healthy, vegan and green!

Somehow on Thursday I came across the blog, Pinch of Yum. How I have not found this site before I don’t know, but I am super glad that I did. I’m seriously considering buying Lindsay’s ebook, Tasty Food Photography. I also really like this series of posts by Lindsay’s husband, Bjork.

Thursday night my Princess goes to dance and my boy has karate. Both are at the same time (convenient right? LOL) and the hubs was working late so my father-in-law took the boy to karate and I drove my Princess to her dance class. Conveniently for me, the dance studio is across the street from the YMCA so I was able to fit in a quick 30 minutes on the elliptical. The YMCA is updating all their equipment, including their spin bikes, so I ran upstairs to get a peak at the new spin bikes, M3 Indoor Cycle by Keiser. I am so excited to go to class on Monday night to ride one of these!

Averie Cooks~Oh my! This blog is full of yummy looking desserts; cookies, cakes, bars, pies, etc. Food porn, dessert edition! Averie writes detailed baking posts and provides mouth watering pictures throughout. I love her tips and tricks! The great thing for me is that a lot of her recipes are vegan or if they’re not, often times she will post how to adapt the recipe to make it vegan! I’ve added about 5 recipes to my “must make ASAP” list from this blog this week alone!

Fork and Beans~I love Cara and her blog! This week she has been posting fantastic recipes for Thanksgiving. All her recipes are vegan and gluten-free! The best part about Cara’s recipes is the ingredient list is short and the recipes are simple to make. Cara is super creative and her food kid-friendly, check out her post, 10 Kid (and Allergy) Friendly Thanksgiving ideas.

Girl Makes Food~Alissa posts delicious and easy healthy meals. I’ve made a few of them this week and have not been disappointed! Alissa is certified in holistic nutrition and each of her posts highlights the health benefits of the food, how great is that? Although not all of the recipes are vegan, there’s plenty to choose from!

Professor Vegan~I love the layout of Davide’s blog, it’s easy to navigate and is full of useful information for vegans. He has recipes on his blog but other fun things as well. Like his current, Walnuts for Brains Food Challenge. The challenge is challenge to have a handful of walnuts everyday for 2 weeks! Then you log onto Twitter, Facebook or Instagram to log your progress using the hashtag #WALNUTS4BRAINS (I’ve been adding walnuts to my baked oatmeal!)

Vegan Kitchen Essentials

Every kitchen has it’s go-to items, staples if you please. What kinds of items are found in the kitchen seems to vary from family to family, but pretty much everyone has condiments, grains, breads, pasta, etc. The vegan kitchen is no different, but some of the essentials are a bit different.

My kitchen essentials has gradually changed over the past six months. I learned quickly when I changed to a plant-based diet that I would have to gradually change what was in my pantry and fridge. Mainly for financial reasons! Overhauling everything at once would be overwhelming.

My pantry, cupboards, fridge and freezer are now much more vegan friendly than a year ago, but are also still a work in progress. I live in a teeny tiny rural town and some vegan basics can’t be found locally. Those items have to wait until Thanksgiving when I go visit my mother and have access to both a Wegman’s and a Trader Joe’s!

Just like standard American kitchen essentials vary, so do vegan kitchen essentials, but I’d like to share mine with you.

Pantry/Dry Goods

  • Beans; Cannelini, Garbanzo, Black, Dark Red Kidney, Light Red Kidney, Navy, and Pinto
  • Vinegars; Apple Cider, White, Red Wine, Balsamic, Rice
  • Oils; Canola, Corn, Extra Virgin, Sesame, Grapeseed, Coconut
  • Grains; quinoa, barley, couscous, grits, rolled oats, steel cut oats, bulgur wheat
  • Whole Wheat Pasta, Hidden Vegetable Pasta (spaghetti, macaroni, ziti, lasagna noodles, etc.)
  • Rice; brown basmati, long grain enriched, quick brown rice

I also always have fresh fruits and veggies. You will always find bananas no matter what! I also like to have apples, pears, oranges, grapefruits, grapes, etc.

Frequent veggies include tomatoes, onion, garlic, peppers (green, red, orange, yellow), carrots, celery, broccoli, sweet potatoes, yellow or white potatoes, and cauliflower.

I currently have butternut and acorn squash as well.
